    What’s a pop up, you might be asking yourself? Well they’ve been around for a while. They are small restaurant concepts that are presented in different types of venues. Such as backyards, food trucks, garages, homes, in any space really. Were a certain type of food concept is served, seating is limited and it’s working hours and dates are not regular. It’s a dynamic that has been happening since approximately the year 2000. In Quito, we could say for the last 4 years or so.

    The reason why this type of dinning has been such a hit is because it offers young cooks the possibility to simulate a restaurant ambiance without the real hassel of a payroll, investors and all the other things involved in opening up a formal restaurant. It gives the cooks involved an opportunity to be diverse, to show different aspects of their talent and of course make a buck in the process.

Start to think of how supporting your local community’s efforts. This will make your city have a better food and dining experience for locals and tourists.
