  • Caramel flan
    Prep time: 30 min.
    Cooking time: 30 min.
    Servings: 10 ramekins or small cups.

    Flan

    • 4 cups of warm milk
    • ½ cup of white sugar
    • 6 whole eggs
    • 2 tablespoons of vanilla essence

    Caramel

    • 1 cup of white sugar
    • ½ cup of water

    Preparation

    1. Preheat the oven to 180º C / 350º F
    2. For the caramel: In a saucepan, place water and sugar until it dissolves and let this simmer. Bring to a boil and lower the heat until the mixture has an ambar color. Very carefully, remove from heat and pour caramel in to the ramekins.
    3. For flan: Pour milk and sugar in to a saucepan and let simmer until it dissolves. Don not let the milk boil. Remove from heat. In a separate bowl beat eggs and vanilla until frothy. Slowly stir in the warm milk to the egg mixture. Beat constantly so that the eggs do not curdle.
    4. Once they are combined, pour the mixture in to the ramekins with the caramel.
    5. Place the ramekins in a baking dish and fill half of it with water.
    6. Bake for 30 min.
    7. When ready, refrigerate for at least 2 hrs., and serve.
    8. You may serve this flan with whipped cream or dulce de leche.
