Flan
- 4 cups of warm milk
- ½ cup of white sugar
- 6 whole eggs
- 2 tablespoons of vanilla essence
Caramel
- 1 cup of white sugar
- ½ cup of water
Preparation
- Preheat the oven to 180º C / 350º F
- For the caramel: In a saucepan, place water and sugar until it dissolves and let this simmer. Bring to a boil and lower the heat until the mixture has an ambar color. Very carefully, remove from heat and pour caramel in to the ramekins.
- For flan: Pour milk and sugar in to a saucepan and let simmer until it dissolves. Don not let the milk boil. Remove from heat. In a separate bowl beat eggs and vanilla until frothy. Slowly stir in the warm milk to the egg mixture. Beat constantly so that the eggs do not curdle.
- Once they are combined, pour the mixture in to the ramekins with the caramel.
- Place the ramekins in a baking dish and fill half of it with water.
- Bake for 30 min.
- When ready, refrigerate for at least 2 hrs., and serve.
- You may serve this flan with whipped cream or dulce de leche.
